Oxtail Stew
INGREDIENTS:
1 oxtail or parts thereof
1 large onion
8 stewing potatoes
1 c. baby carrots
1 c. celery
2 bay leaves
DIRECTIONS:
Boil oxtail, saving water for broth. Dice onions, carrots, and
celery into cubes; slice potatoes in halves or quarters if large;
arrange meat and bone on bottom; put in vegetables, beef stock to
cover, salt and pepper; other seasonings to taste.
Optional: add tomatoes, cabbage, broccoli, and cauliflower.
