Orange Flax Muffins
INGREDIENTS
1 1/2 c. oat bran 1 c. brown sugar
1 c. flour 1 c. buttermilk (or sour milk)
1 c. flaxseed* 1/2 c. canola oil
1 c. natural bran 2 eggs
1/2 tsp salt 1 tsp baking soda
2 oranges, washed, quartered, seeded 4 tsp cinnamon
1 1/2 c. raisins (or half raisins & half choc. chips) 1 T. baking
powder
DIRECTIONS
In large bowl, combine bran, flour, flax seed, baking powder, salt
and cinnamon. In blender or food processor, combine oranges, brown
sugar, buttermilk, oil, eggs, baking soda and vanilla. Blend well.
Pour orange mixture into dry ingredients. Mix well. Add raisins.
Fill paper lined muffin cups almost full. Bake in 375 oven for 18-20
minutes.
*Flax seed may be ground or whole. Measure first, then grind. Makes
18 muffins. 1 muffin - 275 cal, 6.1 gm pro, and 44.5 gm carbs. 5.7
gm fiber, 11.5 gm fat
